Keto easy broccoli cheese soup with bacon

Keto can be tough when you just want something quick and easy. Canned soups or pasta, a bowl of rice,  cereal, etc are all way too high in carbs.

I make broccoli with cheese sauce pretty regularly, but I wanted something a little more hearty. This soup was made entirely in the microwave.


Ingredients:
Frozen broccoli florets - about 2 cups. I just filled my large soup bowl. Cover with a paper plate until it's cooked enough for you. Mine took about 4 minutes on high. I didn't add water.

Heavy cream - about 1 cup
2 tablespoons butter

Microwave these until hot and steaming. May start to boil. About 2 minutes in the microwave for me.

Add in cheese of your choice. I used 3 slices of smoked gouda, but sharp cheddar or other cheese is also great. Mix in with seasonings. I used pepper and Tony Chacheres Cajun seasoning. I also added some cooked bacon bits that I always keep on hand. Microwave for another minute. Season more to taste. I find a fork works well at blending up and breaking down the cheese. As it cools, it will thicken some.

Drain the water off your broccoli and add the cheesy bacon sauce. Mix it all together and microwave another minute or so if needed.

It was stick to your bones good.
