Low Carb Chicken Tikka Masala

A dump and nuke recipe
I wanted carb comforts so badly tonight. Mac and cheese, ramen, a potato!But I resisted, barely, and made a quick and easy chicken tikka masala to feed the crave monster.

I started with these ingredients: Frozen cooked chicken, shelled edamame, and riced cauliflower and veggies; plus jarred tikka masala sauce and low carb Pita Bread. All ingredients were ordered for delivery from Walmart.
I did not measure anything. I used a 7 cup/1.75 qt glass pyrex bowl. I put a layer of cauliflower and edamame on the bottom, then added a generous layer of cooked chicken. These three layers mostly filled the bowl, so use the ratios that you prefer. The sauce gets poured on top.
Then it goes into the microwave for about 6 minutes total on medium power. I stirred every couple of minutes until everything was heated through.
Pita gets nuked for about 10 seconds. Serve on the side as a nice substitute for naan.
Side Note: I don't carb count, but I make sure that my ingredients are low carb. Sometimes the goals is just to eat LESS carbs than I actually want, while still feeling satisfied.
